Refreshing starter: Watermelon gazpacho

Do you fancy a refreshing starter? Try this watermelon gazpacho! Easy to prepare, light, high in nutrients, vitamins, minerals, antioxidants and very tasty! It will help you hydrate and cool down in the heat and is ideal to take anywhere!

WATERMELON GAZPACHO

INGREDIENTS (per serving)


Watermelon (250g cut into cubes).

Tomatoes (3 units).

Cucumber (½ cut into cubes).

Garlic (½ clove).

Onion (½ unit).

Small green pepper (½).

Olive oil.

Vinegar.

Optional to decorate:

Cherry tomatoes (2 units).

Apple (½).

Pistachios - natural nuts.

Black pepper.


PREPARATION



  1. Crush all the ingredients. Start by blending the 3 tomatoes, ½ pepper and ¼ of the cucumber. Add the onion, ½ clove of garlic, oil, vinegar (to taste) and ¾ parts of the watermelon. Shred again.
  2. Cool the gazpacho in the refrigerator for 1 hour.
  3. Personalize it to your liking. Add pistachios on top, the reserved cucumber and watermelon cubes, cherry tomatoes, apple and a little pepper.
  4. Ready to serve!
