  • 4 large sweet potatoes
  • 1 onion
  • 1 whole leek
  • ¼ teaspoon cinnamon,
  • 1 tablespoon of Turmeric
  • Black pepper
  • To your taste: Cardamom powder, Ground cloves, Nutmeg, Cumin
  • EVOO
  • Vegetable broth or water

  • Wash, peel and cut the vegetables into pieces.
  • In a pot with a little EVOO, sauté the onion and leek.
  • Add the spices, lowering the heat so they don't burn. Stir for a few seconds.
  • Add the sweet potato and cover with the broth (or water).
  • When it boils, lower the heat and let it cook for 10 to 15 minutes until tender.
  • Mash, adding a little water if it is very thick.
  • Serve with a splash of EVOO on top, pumpkin seeds, pine nuts, chia.

Pumpkin and ginger cream


  • 1 sweet potato
  • 200 gr. pumpkin
  • 2 carrots
  • 1 onion or leek
  • 1 tablespoon turmeric
  • 1 tablespoon grated ginger
  • 1 pinch of black pepper, salt, cinnamon
  • EVOO
  • Water or vegetable broth

  • Wash, peel and chop the sweet potato, carrot and onion.
  • In a pot, sauté the onion, when it is transparent, add the spices and lower the heat so that they do not burn, stir.
  • Add the sweet potato, pumpkin and carrots and cover with water or vegetable broth.
  • When it boils, lower the heat to medium and add the turmeric, pepper, cinnamon and ginger.
  • Cook for approximately 15 minutes until the sweet potato is cooked. If it becomes too dry, add more water or broth.
  • Brush until the cream is fine to your liking.
  • Serve with the EVOO on top.
  • It is great to decorate with finely chopped chives or mint.
