1. Warm salad of mandarin orange, pomegranate and nuts

A refreshing salad with a warm touch, perfect for winter dishes. The mandarin orange adds freshness and a delicious flavor that contrasts beautifully with the pomegranate and nuts.

Ingredients:

  • 4 mandarins (peeled and separated into segments).
  • 1 pomegranate (seeded).
  • 1 ripe avocado (cut into cubes).
  • 1 handful of toasted walnuts or almonds.
  • 1 teaspoon of honey.
  • 1 tablespoon of extra virgin olive oil.
  • Juice of 1 lemon. 
  • Salt and pepper to taste.
  • Fresh mint leaves (optional).

    Preparation:

    1. In a frying pan, heat the olive oil and add the mandarin orange segments. Cook over low heat for a few minutes, just until they warm through and release their juice.
    2. In a large bowl, mix the warmed tangerines, pomegranate seeds, avocado, and walnuts.
    3. Prepare the dressing by combining honey, lemon juice, salt and pepper to taste.
    4. Pour the dressing over the salad and mix well.
    5. If desired, garnish with fresh mint leaves.

    This salad is perfect as a starter or side dish for grilled meats or light meals. The combination of citrus flavors and crunch is simply delicious.


    2. Duck with mandarin and red wine sauce

    The duck, with its rich and deep flavor, is enhanced by a mandarin sauce that adds freshness, combined with the sophisticated touch of red wine. Ideal for an elegant and special dinner.

    Ingredients:

    • 2 duck breasts.
    • 4 tangerines (juice and zest).
    • 100ml of red wine.
    • 1 tablespoon of brown sugar.
    • 1 tablespoon of balsamic vinegar.
    • 1 teaspoon of butter.
    • Salt and pepper to taste.

    Preparation:

    1. Sprinkle the duck breasts with salt and pepper and cook them in a hot pan, skin-side down first, for 6-7 minutes. Then turn them over and cook for another 5 minutes.
    2. Remove the chicken breasts and keep them warm.
    3. In the same pan, add brown sugar, balsamic vinegar and red wine, letting the sauce reduce by half.
    4. Add the mandarin juice and zest and cook for a few more minutes until the sauce thickens.
    5. Add the butter to give the sauce a creamy and smooth touch.
    6. Serve the duck with mandarin sauce on top.

    This recipe is perfect for special occasions, such as Christmas dinners or elegant celebrations.


    3. Mandarin and white chocolate mousse

    This mousse is a perfect combination of freshness and creaminess. The mandarin orange adds a refreshing citrus touch that contrasts beautifully with the white chocolate, creating a light yet flavorful dessert.

    Ingredients:

    • 2 tangerines (juice and zest).
    • 200g of chocolate
    • 200ml of liquid whipping cream.
    • 2 egg whites.
    • 2 tablespoons of sugar.

    Preparation:

    1. Melt the white chocolate in a double boiler or in the microwave, stirring well.
    2. Whip the liquid cream until stiff peaks form.
    3. Beat the egg whites with the sugar until soft peaks form.
    4. Mix the melted chocolate with the juice and zest of the mandarin orange.
    5. Fold in the whipped cream using a circular motion.
    6. Add the whipped egg whites and mix gently.
    7. Pour the mixture into individual glasses and refrigerate for at least 2 hours before serving.
    8. Melt the white chocolate in a double boiler or in the microwave, stirring well.
